Women’s Health: What Women Need to Know About Diabetes

According to the Centers for Disease Control and Prevention (CDC), an estimated 37 million people are living with diabetes in the United States. That is one in every ten people. Of this number, 15 million women are impacted by this diagnosis. In addition to this statistic, there are 8.5 million adults who are not aware that they have diabetes and 96 million American adults who are living with prediabetes. The total medical costs and lost work and wages for people diagnosed with diabetes is an estimated $327 billion. Despite these statistics, diabetes can be prevented or even delayed with meaningful lifestyle changes.
Diabetes is a chronic health condition that impacts the body’s ability to use food as energy. It is a condition that causes a high level of blood sugar (glucose) in the body. This can occur when the body is unable to produce insulin or is not able to use insulin properly. Insulin is a hormone that has the job of helping the glucose that is in food get into the body’s cells and be used for energy. Glucose in high levels in the body over time leads to chronic inflammation which presents as diabetes. Diabetes increases the risk for heart disease in women by an estimated four times, and women have poorer outcomes following a heart attack than their male counterparts. Women are also at higher risk for diabetes-related complications including kidney disease, eye complications, and depression.

COOK TIME

INGREDIENTS
3 eggs
1/2 cup sugar
1 rounded tablespoon all-purpose flour
1-1/2 cups dark corn syrup
1 teaspoon vanilla extract
1 cup coarsely chopped pecans
1 unbaked 9-inch pie shell
Ice cream or sweetened whipped cream to serve
INSTRUCTIONS
Preheat the oven to 350 degrees.
In a large mixing bowl, beat the eggs. In a separate mixing bowl, mix the sugar and flour. Add the sugar
mixture to the eggs and stir to mix. Add the corn syrup, vanilla and pecans and fold to mix well.
Pour the mixture into the unbaked pie shell and bake until the filling sets, about 45 minutes. Remove
from the oven and let cool for about 10 minutes before cutting into wedges to serve with ice cream or
whipped cream.
