Featured Recipe: Louisiana Strawberry Shortcake

 

Louisiana Strawberry Shortcake

LOUISIANA STRAWBERRY SHORTCAKE

Ponchatoula, Louisiana, is the strawberry capital of the world. It certainly makes sense that Louisianans first created this very English dessert in this area of our state. There is a dispute over the exact shortcake recipe, but most agree with this version.

Ingredients:

4 cups strawberries, sliced
½ cup sugar
½ cup water
2¾ cups flour
2½ tbs sugar
1½ tbs baking powder
1 tsp salt
7 tbs butter
1 cup heavy whipping cream

Method:

Preheat oven to 375 degrees F. In a large mixing bowl, combine strawberries, sugar, and water. Blend thoroughly, cover, and chill for a minimum of 3 hours. In the bowl of a food processor fitted with a metal blade, combine flour, sugar, baking powder, and salt. Pulse to blend thoroughly. Add butter and continue to pulse until consistency of fine meal and it is pale yellow. The tenderness of the shortcake depends on the flour and butter being thoroughly mixed. Slowly pour in cream until the mixture comes together in one mass. Turn dough out onto a floured surface and knead gently 3 to 4 times. Do not over-work. Roll the dough to 3/4-inch thickness and cut into 3-inch circles. Before baking, brush with a bit of cream and sprinkle with sugar—Bake for 20 to 30 minutes or until golden brown. To serve, split the biscuits horizontally and top with strawberry mixture. You may wish to garnish with a spoon of heavy whipping cream and drizzle with strawberry liqueur—dust with powdered sugar before serving. Serve the shortcake while the biscuits are still warm.

49th Annual Ponchatoula
Strawberry Festival

Over the past year we have had many hard decisions to make. All decisions are made with countless meetings, discussions and prayer. Based on the current guidelines, Ponchatoula Strawberry Festival, Inc. has decided to cancel the 49th Ponchatoula Strawberry Festival scheduled for April 9, 10 & 10, 2022.

We are currently working on reaching out to each vendor and booth organization.

We do still plan to have the FARMER’S AUCTION and the LOUISIANA STRAWBERRY QUEEN’S PAGEANT. More info will be released as plans are made for each event.

Jordyn Cosey is the founder and CEO of Coco Visions, a new sustainable beauty retailer. A 2021 graduate of Southeastern Louisiana University (SELU), her goal is to create a line of products that inspires self-confidence, regardless of race, skin tone, or gender.

Jordyn has always had an interest in the beauty industry. The road to business owner began with her experimenting at a young age with kids’ makeup kits she received as gifts from a great aunt. As a teenager, she would, unknowingly to her mother, use her allowance to buy products and test various looks in her room. Around this same time, she became involved with community organizations which led to her deep commitment to social justice issues and, ultimately, her chosen profession. She didn’t realize these two interests would eventually intersect.

While she began to find and exercise her voice as a sociology major at SELU, she also became frustrated with the limited number of quality products available for her skin tone. Never one to accept the status quo and with unusual time on her hands because of the pandemic, she conducted an analysis that revealed a gap of affordable, quality beauty products for melanated individuals. Jordyn’s entrepreneurial spirit was born, and she began to research start-up businesses, product development, and marketing strategies. 

Coco Visions is the marriage of her two passions – beauty and social justice. Jordyn launched the business in January of 2021 with the first release of four lip glosses, which completely sold out on the first day, due in part to a well-planned marketing strategy. After a quick restock, she sold out again within two days. She took some time to build her inventory to avoid selling out too quickly, losing customer interest, and releasing three additional shades in March. Early this summer, she will release three new shades.

All seven shades are considered nude tones, complementary to a soft glam look, Jordyn’s preferred makeup style. The young, aspiring entrepreneur describes soft glam as subtle yet alluring. She is building a client base that agrees with her, as indicated in this review from a verified customer on the Coco Visions website, “About Coco Visions!!! I love all of them. I’m not too fond of lip color; I always feel self-conscious. All of them were perfect. I felt confident I could walk out, and folks would not say, “OMG, you have makeup on!”… then make me want to hide!!! My inner 15-year-old always comes out. This time my inner 15-year-old was cheering!”

That statement encapsulates Jordyn’s hope for her customers, many of whom have placed multiple orders and referred others to the products. She would like to expand her Coco Visions portfolio beyond lip glosses at some point and plans to spend part of the summer focused on developing a business plan that will enable her to move in that direction.

Jordyn admits that starting an exclusively minority/woman-owned business as a college senior has been challenging and exciting; she also acknowledges she has a lot to learn. But she welcomes the challenge and states, “It’s my dream to create a full line of products that enhances one’s beauty and empowers them to take on the world!”

Louisiana Department of Veterans Affairs staff at the state’s five veterans homes and five veterans cemeteries will host ceremonies to honor veterans on Memorial Day.

At our veterans homes, ceremonies will be held for residents and staff including the reciting of the Pledge of Allegiance, singing of the National Anthem and other patriotic songs, reading the names of fallen veterans and veterans who have passed away in the past year, ringing of the bell in veterans’ honor, balloon releases, prayers, playing of Taps and refreshments. While our homes are not able to open these events to the public this year, some ceremonies will be available via Facebook.

The five cemeteries will be conducting abbreviated Memorial Day ceremonies at 11 a.m. on Monday, May 31. Service organizations will be present to place wreaths. Masks will not be required as long as social distancing is maintained. Please note, in order to aid in social distancing, no seating will be provided.

We fully recognize that these ceremonies are not our typical Memorial Day ceremonies, but our goal is to provide an opportunity to honor our fallen veterans. We look forward to getting back to normal operations and ceremonies in the future.

Aside from our Memorial Day plans, we are currently reaching out to all Louisiana World War II women veterans. We will be honoring this special group of heroes during a ceremony on June 10 at 9 a.m. at American Legion Post 38 in Baton Rouge. We have confirmed the attendance of five World War II women veterans, and are excited to honor all World War II women veterans who attend with certificates, lapel pins, challenge coins and Louisiana honor medals.

A Message to School Leaders: Spring and Renewing Our Energy

As a school leader, I have always believed that it is essential to reflect on where we are, where we’ve been, and where we want to be as we move forward in ensuring that our school campus is a place of teaching and learning for all stakeholders. I have found this practice to be even more important as we all navigate our way following a pandemic that has challenged us far beyond our wildest expectations.  In fact, if this school year has taught us anything as leaders, it has validated beyond measure how important it is as leaders that we keep positivity at the forefront of everything we do.

 In keeping our focus as leaders and meeting the needs of our school community, it is more important now than ever that we remember that we must take responsibility and time to renew ourselves for our schools to be successful.  With this thought in mind, I found myself in deep thought right before we rang in the 2021 new year, as I began to reflect and reach for ideas of how I could revive the energy of my teachers, students, staff, and school community.  I knew that it would be critical as a leader to find a way to impact stakeholders positively. As I was sitting in my office and pondering what leader actions I could take or must take to make the most significant impact, I came across one of my favorite quotes by Vince Lombardi.  Lombardi once said, “The measure of who we are is what we do with what we have.” The focus of this quote is that our job takes up most of our life, and the only way we will be truly happy is if we believe in our work and that our work makes a difference in the world.

After reflecting on the quote, I came up with a simple but powerful goal: to make 2021 positive for every school community member.  To accomplish this, I met with every member of my school staff to discuss how I plan to make 2021 great and how they could do the same.  This collaboration with school members was powerful, and the more individuals I sat and talked with, the more energized and positive I became. It was as if I were gaining momentum toward ensuring that come springtime, we would have our sails full of wind, and we would finish the school year strong regardless of the challenges ahead.

In my reflection and collaboration with my peers, teachers, support staff, and students, many great ideas arose in how we as a school community could ensure that we would be ready to finish strong as spring arrives. We, as leaders, can do some things to support the different stakeholder groups to finish the year strong.

Teachers:

  • Leadership members will be leaving sticky notes after each walkthrough with positive messages.
  • Leadership members send a survey out to teachers to gather ideas about how they would like to celebrate Teacher Appreciation Week this year to make it truly special (Sky’s the limit up to $5 per person).
  • Instructional leaders (admin) will be going into classrooms to teach a class for 15 minutes, during which we will send them down to the office where they will receive a drink and a snack.
  • We are drafting motivation buddies, where each employee pairs with another, intending to say one positive thing about the teacher or motivational text a week.
  • We are starting a teacher spotlight on social media where we are shouting out a teacher/employee each day for the rest of the year.  Staff and families can leave positive comments.
  • We will hide eggs around the school in places where only teachers will see them, and inside the egg may be a positive message, jean pass, parking spot, etc.

Students:

  • Grade levels are giving out BINGO cards with our values on them and actions that align.  As they show the values, they get a mark on the card.
  • Students will earn social time for showing our values (20 minutes on Friday during PE).
  • Each week a class per grade level will earn the Spirit Stick based on attendance, effort, and expectations (Three in a row will be a pizza party.)
  • Morning messages of encouragement from administration and teachers.
  • When a student earns a ticket for showing their values, they have the chance to select another student who they recognized delivering that value as well, so more can be celebrated.
  • We will also hold celebrations for students who show up every day at their assigned time during the LEAP.

Parents & Community:

  • The leadership team will communicate the plan to motivate/celebrate students and teachers through social media, emails, and newsletters.
  • The leadership team will work with grade-level teachers to contact parents and community members via a phone call or email to keep them informed on important dates.

In closing, I know that as we enter spring and move forward to the end of the 2021 school year, any momentum that we gain can positively impact the upcoming school year.  I know that everyone in the state has been affected by the pandemic. Still, I also know that if we implement intentional positive leadership actions, then our students will show growth on the end-of-year state assessment test. Our teachers and support staff will benefit from professional development. In addition, it is essential as school leaders that we reflect on our school mission and remind teachers, support staff, parents, and community members of the importance of giving our best for all kids every single day.   So, keep showing up and leading your schools because your positive leader actions make a difference in kids’ lives!

Guard Your Mental Health
A Message For Women

Ladies,

We are living in very turbulent times! We are at war with an invisible enemy, which threatens our very breath. We are socially and politically polarized due to our highly charged opinions and experiences around the construct of race. We are at odds with the earth due in part to our daily habits. We are in turmoil with our emotional health as we see rates of psychiatric distress spiraling out of control, often unaddressed because of untenable stigma about mental illness.

As such, it is critically important that each of you, mindfully and intentionally, Guard Your Mental Health! “Mental Health” has typically meant being in balance mentally, spiritually, and physically through relationships, a faith system, adequate rest, nutrition, and physical activity. Since the pandemic, it has also come to mean responsible masking, safe distancing, good hygiene, and getting vaccinated.

Equally important is good “emotional intelligence.” When used well, it masterfully orchestrates the various challenges we face. For women, our added emotional layering is embedded in our brain’s limbic system, where our instinct to survive and save others is housed. It accounts for our high level of concern for our children, family, friends, and others. One of our greatest assets is the depth of emotional richness we feel. Our adeptness at using our emotional awareness to filter our thoughts and shape our actions is the product of emotional intelligence, a tremendous skill to guard our mental health.

Conscious regard for the dignity of others is a humane expression of emotional intelligence. It promotes self-respect and models humanity for so many who are watching us. Respectfulness rewards us through the release of natural endorphins, which intensify our subjective feeling of wellbeing. We can recreate this feeling over and over again every time we do something good for someone else. Such actions can bring peace and contentment, thus guarding our mental health.

The impact of trauma can begin in childhood when adverse experiences occur early in life. For all stressors, anxiety, worry and fear take the most significant toll on us, both mentally and physically.  Cortisol is usually released for “fight or flight,” where threats of harm (real or imagined) require surges in blood flow, breathing, and blood sugar levels. Sustained worry and fear are emotionally traumatic. Persistent cortisol levels from emotional trauma cause physical harm from chronic hypertension and Type II Diabetes Mellitus. During times of high stress, women and children are more vulnerable to domestic violence. Violence and homicides are more common. Currently, depression and suicide rates and alcohol use, and drug overdosages are at their highest.

So, in a world with many stressors and where a pandemic has put a hard stop to our “familiar,” we must be smart about using our stress response to fuel practicing new ways of guarding our mental health. Being open to learning something new and to sharing it with someone else is a double reward!

Here are a few additional tips to Guard Your Mental Health!

  • Remember to BREATHE
  • Be more flexible in general
  • Balance how you spend your time and with whom
  • Open up to someone
  • Don’t avoid asking for help
  • Find the answers to your kids’ questions and talk with them
  • Be a Blessing to Someone else by helping
  • Embrace differences and look for people’s value
  • Enjoy an occasional indulgence
  • Eat Well! Move more! Sleep enough!
  • Hold on to a belief in something bigger than yourself
  • Choose Joy!

Dr. Rochelle Head-Dunham

Rochelle Head-Dunham, MD, DFAPA, FASAM, is a Xavier University Chemistry Pre-Med Graduate. She attended Tulane University School of Medicine and Albert Einstein College of Medicine in New York, where she completed her Residency in Psychiatry. Later she returned to Tulane to complete a Substance Abuse Fellowship.

Dr. Head-Dunham currently serves as Executive Director and Medical Director for Metropolitan Human Services District (MHSD). She is an Assistant and Associate Professor of psychiatry at Tulane and LSU, respectively, and was formerly State Commissioner for MH and the State Director for Addictive Disorders while serving as the State Assistant Secretary of Behavioral Health.

Dr. Head-Dunham’s clinical, administrative and academic experience strengthens her subject matter expertise as an Addiction Psychiatrist. She is the recipient of many awards for her leadership and service. Named a Physician Champion for the state of Louisiana, she is a national and local thought leader and strategist on systems-level changes in the field of behavioral health.

What Would it Look Like?

In March, Louisiana Fosters started recruiting Churches to take their place in the foster care community. The plight of these children should be at the forefront of the Churches ministry.  However, we are finding that the disconnect between Church and foster care seems to be a vast divide. This tour aims to simplify getting involved in the foster care community in whatever way your congregation can. Each month we are meeting with churches across the state to get them thinking of ways to serve this community. Of course, the most critical need is to find loving and supportive foster families, but that may not be where you start. Other foster families need support! Local non-profits already working in this arena need support! Here at Louisiana Fosters, we always say everyone can do something! Louisiana First Foundation hosted its third Global Human Sex Trafficking Summit on April 29, 2021. First Lady Yumi Hogan and the State of Maryland were the presenters. This summit had 335 participants representing 18 states, Australia and Rome. The next summit is scheduled to be held in July and will address the topic of online trafficking.

These summits provide those working in this field to meet and discuss best practices. Sharing information across state lines and into other countries leads one step closer to eradicating this crime.

Louisiana First Foundation is excited to announce that two of our Teach MAM ambassadors will continue their work within our program for another year. Carolyn Scalfano, Arts Ambassador, and Key’re Bradford, Movement Ambassador, will renew their commitment to us for another school year. With 2020 being a year far from normal, LFF is excited to have an additional year with these outstanding educators. We are saddened to lose our Music Ambassador, Mickey Smith, who was also the Grammy Educator of the Year in 2020. Mickey is relocating to pursue a fantastic opportunity in music education.

Look for exciting things to come in this next school year. LFF will announce its new Music Ambassador in the next few months. Thank you to Mickey for his service to the Teach MAM program, and we are excited to move forward with Carolyn and Key’re!

has Support for Families at its Center

May is National Foster Care Awareness Month. It is a time to acknowledge the 463,000 American children and youth in foster care and the family members, foster caregivers, volunteers, mentors, child welfare professionals, and policymakers who help children and youth find permanent homes and connections.  

The theme of this year’s national awareness campaign is “Foster Care is a Support to Families, Not a Substitute for Parents.” The Louisiana Department of Children and Family Services (DCFS) embraced this theme in 2017 when it joined the Quality Parenting Initiative (QPI) movement.  QPI strives to strengthen foster care by refocusing on quality parenting for all children and youth within the child welfare system.  Research shows children and youth need consistent and effective parenting to thrive. When parents cannot care for their children, another caregiver must step in to provide loving, committed, and skilled care in partnership with the child welfare system.

QPI redefines the expectations of foster caregivers and provides the resources and tools they need. It emphasizes the importance of building a bridge between the foster care system, foster caregivers, and biological parents with the goal of reuniting children and youth in foster care with their families.  Quality foster caregivers open their hearts and homes to children and youth by meeting their daily needs and supporting and encouraging the biological parents as they work toward reunification; this helps to form stronger partnerships with everyone working together to achieve better outcomes for children, youth, and their families.  In Louisiana, two-thirds of children and youth are reunited with their families. This number compares with a little over half (51%) nationwide.

Community support is also crucial in helping caregivers provide quality parenting and support biological families. Become a Foster Caregiver

Quality Parenting in Louisiana has genuinely made a positive difference in the lives of children and families involved in the child welfare system; however, with over 4,000 children and youth in foster care on any given day, there are ongoing needs. One of the greatest needs is for more foster caregivers, especially for older youth.  There are over 1,000 Louisiana teens in foster care. These youth account for approximately 25 percent of the total population of children in foster care in Louisiana but only 4 percent of the state’s current foster families providing homes specifically for teens. When there aren’t enough families available for teens, it causes these young people to leave their schools, friends, activities, and communities. Research has consistently shown that young people who transition from foster care without caring connections and support experience poor outcomes at a much higher rate than their peers in the general population. A stable and supportive home increases a teen’s hope for the future and builds self-esteem and confidence.
